How I Simplified My Gluten-Free, Dairy-Free Diet with AI

I wanted to share a little story about how AI has been a game-changer for me—especially when it comes to managing my diet while dealing with Hashimoto’s.

For those who might not be familiar, Hashimoto’s is an autoimmune disorder that affects the thyroid, leading to symptoms like fatigue, weight gain, and difficulty managing certain foods. It’s a lot to juggle, especially on top of the everyday demands of life. 

Like many of us, I’m in the midst of navigating perimenopause, which brings its own set of challenges.

Trying to balance everything while sticking to a gluten-free and dairy-free diet 

It felt impossible at times.

That’s when I decided to try something new—letting AI step in. 

Here’s how it worked: 

I simply provided a list of foods I can and can’t eat, taking into account my Hashimoto’s and dietary needs.

Within moments, AI generated an entire week’s worth of meals for me—breakfast, lunch, and dinner—all tailored to my gluten-free, dairy-free lifestyle. 

And as if that wasn’t enough, it even created a detailed shopping list with everything I needed.

No more stress, no more guesswork—just a clear, easy plan that fits my life. 

Here are the three things I loved most: 

1. Customized Meal Plans: The AI took my specific health conditions and dietary needs into account, creating meals that are safe and satisfying, without any of the foods I need to avoid.

2. Time-Saving: Instead of spending hours figuring out what to eat for the week, AI did it all for me in minutes.

3. Stress-Free Shopping: With a detailed shopping list in hand, I knew exactly what to buy—no more wandering the aisles or worrying if I’d forgotten something.

This has been a lifesaver, especially as I navigate the symptoms of perimenopause. It’s tough enough managing these changes without having to worry about my diet, too.

 And the best part?

I didn’t have to be a tech expert to make this work. It was as simple as copying and pasting my food lists and letting AI do the rest.
